Rainbow Cabbage Slaw

If you need healthy, vibrant, nutritious food in your life that’s as delicious as it is beautiful, this is the dish for you! I’ve been making it at least twice a month to munch on throughout the week. It makes a great side dish, or you can top it with grilled portobello mushrooms, chicken or fish to upgrade it to a full meal.

It’s very simple to make, The most time intensive part is wash and chop all the produce. What’s even more difficult is resisting the temptation to munch on everything as you prep it.

Ingredients

Sweet and Tangy Cabbage Slaw:

1 small head of purple cabbage, shredded and thinly sliced
3 carrots, grated
1 cucumber, sliced into thin strips
1 red pepper, sliced into thin strips
1 yellow pepper, sliced into thin strips
1 fennel, sliced into thin strips
1 avocado, cubed
1/2 cup  pumpkin seeds
1 tbsp Everything But the Bagel Sesame Seasoning from Trader Joe’s
Dressing (recipe below) to taste
1/2 cup Cashew Cream (if you want it to be creamy)

Combine all ingredients in a large bowl and toss until combined.

Sweet and Tangy Cabbage Slaw Dressing:

2 tbsp organic virgin coconut oil, melted
1/4 cup apple cider vinegar
2 tbsp low sodium soy sauce
2 limes, juiced
1 tbsp raw, organic honey
1/2 tbsp Dijon mustard
1 tsp garlic powder
Salt and Pepper to taste

Place all ingredients in a mason jar and whisk/shake to combine.
